Chef John's Pumpkin Pancakes

Ingredients
  1. 2 cups all-purpose flour 2 tablespoons brown sugar 1 tablespoon white sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup pumpkin puree .
Directions
  1. Combine flour .
  2. brown sugar .
  3. white sugar .
  4. baking powder .
  5. baking soda .
  6. and salt in a large mixing bowl .
  7. and whisk together for two minutes to aerate. .
  8. In a separate bowl .
  9. combine pumpkin puree .
  10. cinnamon .
  11. ginger .
  12. allspice .
  13. egg .
  14. milk .
  15. 2 tablespoons of vegetable oil .
  16. lemon juice .
  17. and lemon zest. Mix in the flour mixture .
  18. and stir just until moistened. (Do not overmix.) .
  19. Coat skillet with 1 teaspoon vegetable oil over medium heat. .
  20. Pour batter into skillet 1/4 cup at a time .
  21. and cook the pancakes until golden brown .
  22. about 3 minutes on each side. .
